Family weeknight dinners under 30 minutes
Five dinners for the nights when cooking is the last thing you want to do. Every one is thirty minutes or less by Cookidoo's own published timing, and every one is a whole meal rather than a component.
The five dinners
In no particular order. Pick by what is in the cupboard.
-
Black Bean Quesadillas with Guacamole
Two things at once: the guacamole goes through the bowl, the filling cooks, and the pan does nothing but crisp the tortilla. Good for a night when nobody agrees on dinner.
-
Chickpea and Tomato Rogan Josh
Store-cupboard, entirely. Nothing here needs a trip to the shop, which is the point of keeping it on the list.
-
Chicken Caprese Pasta Salad
Warm or cold, and it survives being made ahead. The one to cook when the evening is going to be interrupted.
-
Chilli and Peanut Noodles with Tofu and Chilli Garlic Oil
The sauce is made in the bowl and the heat is yours to set, so it scales from child-friendly to genuinely hot without cooking twice.
-
Vegan Chickpea and Mushroom Stew
One bowl, no browning in a separate pan, and it reheats better the next day. The plan's quiet Monday.
Making these work on a bad evening
- Do the chopping in the bowl, not on a board
- The time saved on a weeknight is almost entirely knife work. If a recipe starts with an onion, it goes in whole.
- Double the two that freeze
- The rogan josh and the chickpea stew both reheat better than they cook, so a double batch buys you a sixth dinner for no extra effort.
- Thirty minutes is the recipe, not the evening
- These are Cookidoo's published total times. Getting everyone to the table is still your problem, and no machine has solved it.
Cook one of these with me, in your kitchen
A demo is free, takes around two hours, and we cook a real meal you then eat. Tell me what you like cooking and roughly where you are.
